2Chicken breastssliced thinly, lengthwise
2TBSPSmoked Paprika
1TBSPKosher salt
2tspground black pepper
2tspgarlic powder
1tspdried oregano
1/2tsponion powder
1/2tspdried thyme
A few loose leaves of Bibb lettuce
4Buns of your choice
Tomato Jam
2lbsRoma tomatoes chopped
1/4cupLight brown sugar
1/4cupraw honey
2TBSPApple Cider Vinegar
1TBSPGrated ginger
1tspKosher Salt
1/4tspGround Cinnamon
Honey Mustard
1/2cupmayonnaise
2TBSPHoney
2TBSPDijon mustard
1TBSPYellow mustard
Dash of black pepper

Chicken Sandwich Directions
Preheat your grill or grill pan on medium-high heat until very hot (5-10 minutes).
In a small bowl or container, mix all of the spices and seasonings until a uniform spice blend is created. Coat the meat with a light layer of oil and season with the prepared spice mixture. Set the seasoned chicken aside for 20-30 minutes while you make the remaining components.
Once your fixings are made, place the chicken breasts on the grill and cook over medium-high heat for 4-6 minutes on each side or until the thickest part of the chicken reaches an internal temperature around 160 and 165 degrees F. Allow the chicken to rest for a few minutes before plating
To assemble the sandwich, begin with a light layer of honey mustard, followed by lettuce, chicken, tomato jam, and more honey mustard.
Tomato Jam Directions
To a saucepan over medium-high heat, add the chopped tomatoes along with the remaining ingredients and bring the mixture to a boil, stirring frequently with a rubber or wooden spatula.
Reduce the heat to a simmer and stir every 2-3 minutes, until the mixture has thickened to the consistency of a loose jam. This can vary depending on the size and material of your pan, but on average, it will take about 30 minutes.
Remove from the heat and allow the tomato jam to cool to room temperature. Use immediately or transfer to an airtight container and store in the refrigerator for up to 1 week.
Honey Mustard Directions
Add all ingredients to a small bowl and whisk until smooth and combined. Refrigerate for up to 1 week or use immediately.
